For those of you enjoying the Season of Tomatoes here is the best Salsa recipe you can can, EVER!
Hot Sauce Salsa
Makes approx. 32 pints
3/4 bushel of tomatoes-wash and place in sink. Scald by pouring boiling water over them, core and peel squish in pan using hand to leave large chunks of tomatoes.
6 cloves of garlic minced
6 large onions
6 green peppers
3 red peppers
1 bunch cellery leaves and all diced
8 jalapeno's, 2 with seeds (or more if you want it hotter)
6 Aneheim peppers, seeds removed
Wash and cut up all of the veggies, grind using food precessor.
Pour juice and all over tomatoes and begin to simmer over medium heat. Divide into two pans to cook, divide seasonings, veggied, and tomatoes.
4 Cups Vinegar
2 Cups Brown sugar
5 TBSP. salt
4 tsp Oregano
4 tsp crushed red pepper
4 tsp. basil leaves
4 tsp black pepper
Bring to a rolling boil. Boil all day, stirring often to prevent scorching. (Begin at 7 am and boil to thicken; about 8 hours.)
Place bottles in dishwasher to heat and sterilize.
Fill hot jar within 1/2" from the top. Wipe and place lid on tightly. Process in pressure cooker using 2 quarts of water and 2 T White vinegar.
Change water with each batch. (Process 25 min at 40 lbs pressure, or per guidelines from Utah state extension-Canning)
14-16 pints will fit in each batch. Begin with weight and high heat. When jiggles, turn heat to about 3/4 to high. Should jiggle 3-4 times per min. Too much heat will cause seaping. Allow to cool before removing weight and opening cooker.
Tighten lids, wipe, label and store.
(my grandma makes me pressure cook it, but my mother in law doesnt. So i am not sure which way is right, but I pressure cook mine)
We have had so much produce from our garden and out carrots are huge. These are the size of my forearm, I should have held them for a better picture. I am not sure what I am going to do with all them.
The greenish round things are Khol Rabi's and they are delish! Kinda like a radish/turnip. The one was the size of brandons 2 fists! BIG!!
and last but not least here's my boy...
He loves riding the mower and thinks he can drive it already!
p.s. he is already walking at 10 and a half months! Crazy!
