Summer Salsa and Salad...

Please, Please, Please let this warm weather stick! And quite flooding!

So I am just ready to have some summer food, and this memorial day I got in a Healthy Summer food kick and we had a delicious dinner...

It all started with this...



Veggie Salsa

6 to 8 Roma Tomato's
1 Small red onion
2 to 3 Avacados
1 can of White baby corn
1 can Black beans
1/2 bunch Cilantro, Chopped

Dressing:
Juice of 1-2 Limes
2 to 3 TBSP. White Vinegar
1 Tsp Balsamic Vinegar
Salt to taste

Dice all Vegetables. Mix all ingredients together and enjoy! Let sit for a little bit to let all the flavors blend together.
Add Avocados right before serving so they do not turn brown too quick.
Serve with Taco chips

And this...

Fruit Dip:
2 small jars Marshmallow puff (by ice cream toppings)
1 small tub of Mixed Berry cream cheese

blended together and refridgerated for a few hours before serving.
Serve with cut up apples, strawberries, bananna's and some grapes, Yum!

Of course we had ourselves a nice juicy burger to go with all these veggies and fruit!

Next time I am thinking of trying this Frito Salad. I cant wait!



Frito Salad

2 Cans Black Beans, Drained
1 can of Sweet Corn
1 bunch of green onion, chopped
1 Green Pepper, Diced
3 to 4 Tomato's, Diced (Roma or Regular)
1 Bottle of Catalina fat free dressing
1 bag Honey BBQ Frito's
Optional 1-1/2 C Cooked Diced Chicken

Mix everything together, Add dressing. Add in Frito's right before serving. Enjoy!
