Dinner is up!

So since I have started my new adventure of being a mom I am totally obsessed with making dinner. True... I have let the house get a little cluttered, but mostly with baby toys, blankets and laundry waiting to be folded on the kitchen table. But I love to cook, it is no secret. So I thought I would share because it is SO hard to come up with new meal ideas let alone something that is ever a little bit good. We are super picky at our house so rest asured that these are good recipe's.


60 Minute Rolls
(24 good sized rolls)




1/2 cup milk
1/4 cup sugar
2 t salt
3 T butter
3 packages (0r 6 3/4 t) active dry yeast
1 1/2 cups warm water
5-6 cups flour

In a small sauce pan, stir together milk, sugar, salt and butter. Heat over low until the butter melts and the sugar dissolves. Cool to lukewarm.

Dissolve yeast in warm water in mixing bowl. Add the lukewarm milk mixture and 4 1/2 cups of flour to the yeast mixture and mix, using the dough hook, on low for about a minute. With the mixer still going, add the remaining flour 1/2 cup at a time. (I didn't need to add all of it, so just add until the dough starts to clean the sides of the mixing bowl). Continue mixing for another couple of minutes or until the dough is smooth and elastic. (The dough will be slightly sticky to the touch.)

Place the dough into a greased bowl, turning to grease the top. Cover the bowl and let the dough rise in a warm, draft free place for 15 minutes. Turn the dough onto a lightly floured surface and divide into 24 equal pieces. Shape each piece into a ball and place in a greased muffin tin or 9x13 pan. Each 9x13 pan will hold 12 rolls. Cover the pans with a clean dish towel and let the rolls rise for 15 minutes.

Bake at 425 for 12 minutes or until the rolls are golden brown. Brush the tops with melted butter when you take them out of the oven.

Your probly wondering why I posted rolls first, well because this little puppy that's next....Meatballs!

We eat these meatballs with mashed potatoes, or over rice, or as cute little slider sandwiches with melted cheese on top, whatever floats your boat, try it!

FOR MEATBALLS
(from Pioneer Woman Cookbook)
1-½ pound Ground Beef
¾ cups Oats
1 cup Milk
3 Tablespoons Very Finely Minced Onion
1-½ teaspoon Salt
Plenty Of Ground Black Pepper, to taste

FOR COOKING MEATBALLS
1 cup All-Purpose Flour (coating For Frozen Meatballs)
Canola Oil

FOR SAUCE
1 cup Ketchup
2 Tablespoons Sugar
3 Tablespoons Vinegar
2 Tablespoons Worcestershire
4 Tablespoons (to 6 Tablespoons) Onion
1 dash Tabasco
Preparation Instructions
Preheat oven to 350 degrees.

Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.

After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour.

Brown meatballs in canola oil until just brown. Place into a baking dish.

Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes.




So tonight, or tomorrow if I feel like it I will be trying out these bad boys...

Pizza Bites
(barefoot and baking blog)

Pizza dough*
Ranch dressing (already made up)
mozzarella cheese, cubed into 1/2 inch cubes
olive oil
Italian seasoning
garlic powder
Parmesan cheese


*You can use whatever pizza dough is your favorite. I used this one.
Dough
(California Pizza Kitchen)

1 teaspoon yeast
½ cup plus 1 tablespoon warm water
1 ½ cups bread flour or all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1 tablespoon extra virgin olive oil

Put yeast into warm water and let sit for a few minutes to activate. Add the rest of the ingredients and mix until combine and smooth. Do not over mix, this will make your dough tough. Let rise until double.

You can really fill these bites with anything you would put on a pizza...pepperoni, pineapple, bell peppers, etc.
