To catch-up we have had a fun fall/winter so far.
Memphys turned 2. We did a constriction/Tractor party and he loved everything! Especially his Hulk hands and Mask from his aunt Misty. Needless to say, everyone got a punch before they left.

Brandon's Grandpa passed away, and they painted some flames on the casket for him...It turned out to be so cool!

The ingredients:
Boneless skinless chicken breasts, minute rice, 1 pkg. onion soup mix, can of cream of chicken soup, can of cream of celery soup, water.
Mix together “cream of” soups, 1 can of water, and 2 cups of minute rice (uncooked.) Pour into a buttered casserole dish.
Lay chicken breasts on top of rice mixture and sprinkle onion soup mix on top. Cover with tin foil. Don’t forget that important step!
Here is where the name Forgotten Chicken comes in. Once you have it in the casserole dish you can put it in the oven and forget it! Put it in on a low temp. (around 250-275) for 3 hours at least, Or you can cook it at 350-375 (depending on your oven) for one to one and a half hours. It is hard to mess up so if you forget it is in there don’t worry, it is probably still okay!
The rice on the outside edges should be slightly browned and crispy and the rice on the inside soft and moist. Ingredients
8 quarts air popped corn (about 2 cups of kernels)
1 cup salted butter
2 cups light brown sugar, packed
1 teaspoon salt
1/2 cup light corn syrup
1 teaspoon baking soda
1 cup salted peanuts
30 “Fun Size” Snickers bars coarsely chopped
3 oz melted semi sweet chocolate (optional)
Instructions
Preheat oven to 200°
Over medium heat boil butter, brown sugar, salt and corn syrup for 5 minutes.
Remove from heat and stir in your baking soda.
Pour over your popcorn and stir to coat evenly.
Transfer to waxed paper lined counter and sprinkle peanuts on top. Stir until all is coated evenly.
Transfer popcorn into a large roasting pan and bake for 1 hour 15 minutes, stirring every 15 minutes.
Remove from oven and stir in your coarsely chopped Snickers. Return to oven for 3 more minutes so the Snickers begin to melt slightly into the popcorn.
Remove from pan and transfer popcorn back to wax paper to cool.
Drizzle melted chocolate on top of popcorn if desired.
Let set and store in an airtight container.

It started out fine, and then the croup hit us. <br />Muffins was scheduled to get some Ear tubes placed, so we had to postpone the surgery until he got over his croup. <br />He had the tubes put in and he was such an awesome patient. He wasnt scared at all! He had himself a really good scream and then he was fine. We were on our way home 30 min after he woke up from the surgery. Our Muffin man turned 1 on October 30th, 2011. It was such a fun day. I seriously cannot believe that a year had passed! And not only was Memphys walking he was running!! Like a wild man!<br /><br />Brandon's cousin Shaylee slaved for hours and hours over his monster cake and cupcakes! They were so yummy and Memphys loved every second of it. He did eat a little too much pizza so he didn't get to eat much cake. Bummer! So good thing we went while they had an event called Canon days. It was just right for my taste, adding a nice warmth to the glaze. If you're not into rum you can sub a teaspoon of vanilla extract. <br /><br />Directions<br /><br />In a saucepan over medium-high heat, brown 2 tablespoons of butter, letting it bubble up and turn a dark golden brown but being careful not to allow it burn (turn black). Once browned, remove the pan from the heat and carefully add the milk, return to stove and heat through.**** Pour the milk and butter into the bowl of standing mixer (fitted with a dough hook) and allow to cool so it is no longer hot but also not cool (about 100-110 degrees F). Once it has reached a warm but not hot temperature add the yeast and 1/4 cup of sugar and allow to proof (this can take up to 8 minutes, the top will look foamy and the liquid cloudy). Then add the the pumpkin, salt, and 1 cup of flour. Stir until combined then add the rest of the flour 1/2 cup at a time and knead for 6 minutes, until the dough is smooth and elastic and just slightly sticky. If the dough is too moist, add extra flour 1 tablespoon at a time.<br /><br />Move dough to a lightly oiled bowl and cover with a clean towel. Allow to rise in a warm place for 60-90 minutes or until doubled in size.<br /><br />While dough is rising, brown another 2 tablespoons of butter. Add the sugar, cinnamon, and nutmeg and mix well.** Making sure sugar evenly absorbs the butter. Set aside. Next, grease and flour a 9x5 loaf pan and set aside.<br /><br />When the dough has doubled in size, punch it down and flip out onto a clean floured surface and knead with hands for 1-2 minutes. Roll dough into a 20x12 inch rectangle.*** Evenly sprinkle the dough with the cinnamon sugar mixture and press into dough with palms of the hand. Cut the rectangle into 6 strips. Lay strips on top of each other and cut each strip into 6 even squares (cut in half then each half into thirds). Stack strips vertically into the loaf pan. Cover the pan with a clean towel and let rise for 30-45 minutes.<br /><br />In the meantime preheat an oven to 350 degrees. After rising in the pan bake for 30-40 minutes (mine took 37 exactly) or until top is a very deep golden brown.<br /><br />To prepare the glaze, heat the butter, milk, and brown sugar in a small saucepan. Bring to boil then immediately remove the pan from the heat and stir in the rum and powdered sugar.<br /><br />**Of course I didn't properly read this section of the directions... I was supposed to melt the butter and brush the dough with the butter then adding the sugar on top of the butter (instead of mixing it all together and sprinkling) but it worked my way so that's how I am listing it. It's really your call!<br /><br />*** If dough is difficult to roll out, cover with a towel and allow to relax for a few minutes then try again.<br /><br />**** My milk was room temperature. Adding it cold to the butter can result in clumping. Willow Bird Baking called for removing the butter from the pan, then heating the milk, then adding the butter back to the milk. I was lazy which is why I skipped that step. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes. <br /><br />Add drained and rinsed beans. Stir to combine, then cover and simmer for another 20 minutes. <br /><br />Simmer for a final 10 to 15 minutes. Set aside. <br /><br />Serve by slicing the Frito bags open lengthwise. Pile in chili and cheese, and diced onion if using. Serve immediately with plastic forks. They are all over our garden and by the shed and making their nasty little nest things everywhere, including hiding them in places you put your fingers without looking so they can swarm you and sting! They are nuts!<br /><br />So we have had some experience with them recently and I thought I would share my remedy if you get stung...<br /><br />As soon as you are stung get <strong>ice</strong> on it immediately! I'm talking quick, it helps with slowing down the spread of venom and makes it less of a welt later. Mud also helps the same, or baking soda. We tried putting a cut onion on the area after but we really didn't notice a difference. <br /><br />If you do not have ice close put a cold drink on it, anything helps. <br /><br />Usually the area where you were stung gets red and welty looking between 6-24 hours after being stung. There are a few things that will help with the itchy/red/hotness. <br />Lavender oil works wonders on wasp stings. Also Hydrocortizone cream and allergy pills will take the edge off.<br /><br />If it looks seepy, oozing, or looks like its getting infected, quit picking at it and keep it clean and dry. And draw a circle around it with a marker to check if it is in fact getting bigger. If there is ever a line running off from it get to your doctor ASAP!<br /><br />Most wasp/bee stings can be taken care of at home, there is no need to rush to the ER for the sting unless you are severely allergic which you should have an EPI pen with you at all times, but that is a whole different matter entirely.B.A.Mhttp://www.blogger.com/profile/09189819912128942982noreply@blogger.com0tag:blogger.com,1999:blog-2699973198794508811.post-52253524525012831942011-09-19T16:00:00.001-07:002011-09-19T16:06:04.461-07:00Salsa!For those of you enjoying the Season of Tomatoes here is the best Salsa recipe you can can, EVER!<br /><br />Hot Sauce Salsa<br />Makes approx. 32 pints<br /><br />3/4 bushel of tomatoes-wash and place in sink. Scald by pouring boiling water over them, core and peel squish in pan using hand to leave large chunks of tomatoes.<br />6 cloves of garlic minced<br />6 large onions<br />6 green peppers<br />3 red peppers<br />1 bunch cellery leaves and all diced<br />8 jalapeno's, 2 with seeds (or more if you want it hotter)<br />6 Aneheim peppers, seeds removed<br /><br />Wash and cut up all of the veggies, grind using food precessor.<br />Pour juice and all over tomatoes and begin to simmer over medium heat. Divide into two pans to cook, divide seasonings, veggied, and tomatoes.<br /><br />4 Cups Vinegar<br />2 Cups Brown sugar<br />5 TBSP. salt<br />4 tsp Oregano<br />4 tsp crushed red pepper<br />4 tsp. basil leaves<br />4 tsp black pepper<br />Bring to a rolling boil. Boil all day, stirring often to prevent scorching. (Begin at 7 am and boil to thicken; about 8 hours.)<br />Place bottles in dishwasher to heat and sterilize.<br />Fill hot jar within 1/2" from the top. Wipe and place lid on tightly. Process in pressure cooker using 2 quarts of water and 2 T White vinegar.<br />Change water with each batch. (Process 25 min at 40 lbs pressure, or per guidelines from Utah state extension-Canning)<br />14-16 pints will fit in each batch. Begin with weight and high heat. When jiggles, turn heat to about 3/4 to high. Should jiggle 3-4 times per min. Too much heat will cause seaping. Allow to cool before removing weight and opening cooker.<br /><br />Tighten lids, wipe, label and store.<br /><br />(my grandma makes me pressure cook it, but my mother in law doesnt. Cook and drain broccoli and put in the bottom of a 9x13 pan.<br />2. Layer chicken pieces next.<br />3. Make a sauce of the soup, mayonnaise, lemon juice and cheese. Spread over chicken. Bake at 350 for 35 minutes or until heated through<br /><br />A while ago I posted some thank-yous I had made my co-workers for a baby shower they had given me, and I finally got the Popcorn ball recipe from my grandma that she used to make them. I hope you enjoy!<br /><br />POPCORN BALLS<br /><br />Ingredients<br />2 cups sugar <br />1 1/3 cups water <br />1/2 cup light corn syrup<br />1 teaspoon white vinegar <br />1/2 teaspoon salt <br />1 teaspoon vanilla extract <br />18 cups popped corn<br /><br />Directions<br />In a medium saucepan, combine sugar, water, syrup, vinegar, and salt. Cook over high heat until mixture reaches 255 degrees F (hard-ball stage) on a candy thermometer. Stir in vanilla. Pour over popped corn, tossing gently to coat. When mixture is cool enough to handle, press popcorn into 3-inch balls with lightly greased hands. White Vinegar<br />1 Tsp Balsamic Vinegar<br />Salt to taste<br /><br />Dice all Vegetables. Mix all ingredients together and enjoy! Let sit for a little bit to let all the flavors blend together.<br />Add Avocados right before serving so they do not turn brown too quick.<br />Serve with Taco chips<br /><br />And this...<br /><br /><strong>Fruit Dip:</strong><br />2 small jars Marshmallow puff (by ice cream toppings)<br />1 small tub of Mixed Berry cream cheese<br /><br />blended together and refridgerated for a few hours before serving.<br />Serve with cut up apples, strawberries, bananna's and some grapes, Yum!<br /><br />Of course we had ourselves a nice juicy burger to go with all these veggies and fruit!<br /><br />Next time I am thinking of trying this Frito Salad. Preheat oven to 325°F. Line a 9 x 13-inch pan with foil, leaving a 2-inch overhang on two sides (I spray mine with cooking spray).<br /><br />2. Make the crust: place 28 Oreos in a food processor and process until finely ground. Pour into a large bowl, add the melted butter, and stir with a flexible spatula until all crumbs are moistened. Place the cookie-crumb mixture in the lined pan and, using your fingers, press the mixture firmly and evenly into the bottom. Bake for 10 minutes, then remove to a wire cooling rack (leave the oven on) while you make the filling. Snap the remaining Oreos in half, put them in the food processor, and turn on and off quickly a few times, just until the cookies are roughly chopped.<br /><br />3. Make the filling: In a large bowl, using an electric mixer on medium speed, beat the cream cheese and sugar until well blended, about 2 minutes. Scrape down the sides and bottom of the bowl with a flexible spatula and beat again until uniform. Beat in sour cream, vanilla and salt. Scrape down the bowl and mix again. Add the eggs, one at a time, beating well after each. After beating in the last egg, scrape down the sides and bottom of the bowl and beat one more time, to make sure the mixture is fully combined. Stir in chopped Oreos with the same spatula.<br /><br />4. Pour the cream cheese mixture over the baked cookie crust, smooth the top with the spatula, and bake for 40 minutes, until the filling is set around the edges but still slightly wobbly in the center when you gently shake the pan. Remove the pan to a wire rack to cool to room temperature, about 1 hour. When cool, cover it with foil and refrigerate until well chilled, at least 3 hours. (I chill mine overnight.)<br /><br />5. To cut, use the foil overhang to lift the cheesecake out of the pan and place on a large cutting board. Use a sharp chef’s knife to cut the cheesecake into bars, rinsing off the knife with hot water and wiping it dry between each cut. Keep refrigerated until ready to serve.<br /><br />Yield: 24 bars<br /><br /><strong>Cooking Tips:</strong><br />These work best served on flattened out cupcake papers with a fork stuck on top!<br /><br />P.S. He is so happy all the time, unless he is starved (which at meal-time he really thinks he is). He started sitting all by himself last week and thinks he is Mr. in charge of everything. He loves his stuffed Horsie, and his Elephant, as well as his race car. Such a boy! His first love, next to his mom of course is his Bink! <br /><br />We went to the baby animal days in Logan over Easter weekend, and he was so curious about all the animals, but of course he really only cared about the Horse's. Every movement, and sound they make is so fascinating to him. He still loves his Horsie show, and we watch it everyday. I think I have it memorized start to finish!<br /><br />Along with sitting up he has been exploring what he can do with his hands. He has started to use just his pointer finger to touch things and is very detail oriented, he listens to everything. Everyday he sits so quietly just taking everything in, Learning is what I think he is doing, but he could be being mischievous. Who knows...<br /><br />He rolls and twists and arches his back just getting a different angle to see things by. I had to move the furniture around so he had room enough to move and I can let him go without worrying he will bonk his head on the coffee table or something. He has also started to try to scoot, but hasn't quite gotten the hang of it yet.<br /><br />He babbles Momma all day long, I LOVE IT! and he started babbling DA DADA again, he loves to squeal and use his girl voice, his dad hates that part. He likes to look at hands and faces, but he pinches and pulls and rips on your hair and nose and eyes, so that's not my very favorite thing.<br /><br />He has started to eat food, and he just cant get enough! He will eat and eat and eat until he pukes and he cries big crocodile tears if you don't feed him fast enough. His favorite food so far is GREEN BEANS! Yuck!<br /><br /><br />Ok..
